If a V chord is played for more than one bar, you can combine various major arpeggios for a more complex sound. Notice in the examples that I'm playing that I frequently use double stops to imply the harmony. Pay attention to visual orientation as you play the various substitutions (i.e., locate 11ths, b5s and b9s as you play them). You will be internalizing the sounds as you locate them physically on the neck.
