String skipping invites you (no, begs you) to play wide interval licks. Exactly like it sounds you're literally skipping strings. For example, starting out on the 5th string you play an ascending three-note-per-string sequence and then skip over to the 3rd string for the next three-note-per-string sequence followed by the 1st string. That's string skipping.
