The examples are about call and response, a very important part of blues.
We're using different shapes of chords all over the neck to create this effect. We're also using harmonized melodies within the mixolydian scale.
Both techniques can be challenging, because you have to keep the rhythm pattern going while focusing on the different shapes of chords you're gonna play.
And if you are using triads to harmonize a melody, you also have to know which chords belong to which scale.
