When applying a Dorian scale to a II V I keep in mind that you would only think the Dorian scale if in fact the II chord was being played long enough so that you heard the II chord as the key center.
Although I've set up a jam track that does make the II chord a key center this is unusual to find in jazz music. Mostly I want you to realize that you cant learn music without using your ear to help you know what key you are in.
By knowing the key center you will know the right way to think and hear the scale you are using. I highly recommend you work with the "Ear Training One Note Complete" book as you begin your music studies so that you can improve your ear at the same time that you improve your knowledge of music and the guitar fretboard.
Again you should learn your dorian scale in all keys because II V Is can be found in all keys when playing jazz. The PDF will g I've you the fingerings for the Dorian scale.
